Tomato soup with roasted red peppers has to be one of my favorites, especially with a grilled cheese for fall. I’m going to show you guys how to make it. It is all made in one pot. And I’m going to slow it down so that way I’m not talking a bit too fast for you guys. I’m going to add a mixture of about a tablespoon of butter and oil. The butter is for flavor, but the oil is for the heat because I don’t want it to burn. To that, you’re going to cut up one medium sized onion, two carrots, you can chop them small, and then one red bell pepper. To that, I’m going to add about a tablespoon of Italian seasoning. I have the video of my Italian seasoning posted, or you can just use any storebought one. You want to cook these until they get soft, about five or six minutes. Then to that, you’re going to add three cloves of sliced garlic, two heaping tablespoons of some tomato paste, and then you’re going to add in sundried tomatoes. Whether you have the ones that are packed in oil or the ones that are just dried, do about 2 tablespoons of those. Then we’re going to add in two 14 oz cans of diced tomatoes. If you have fire roasted, that’s even better, but if not, do not worry about it. Once you add that in there, you want to cook your tomatoes for about 2 or 3 minutes. You want to get out that metallicy tinned taste. Then I’m going to add a bit more seasoning. This is about a teaspoon of onion, garlic, black pepper, and salt. Then for our liquid, I’m adding water and some chicken bullion powder. Or you could just do chicken broth. That is 2 cups of water. Then I’m going to take an immersion blender. If you do not have this, I highly recommend getting one. They are about $20 on Amazon. If not, you can pour it in a blender. Just be careful because it’s going to be very hot. Then I’m going to add about a/4 cup of some heavy cream. It just gives it this delicious mouth feel. It is incredible. I made a jalapeno cheddar grilled cheese. It was so good.   1. I say this because I'm not a big fan of tomato soup but I love roasted red bell peppers and the combination and the way you made this with the grilled cheese sandwich looks absolutely delicious when it's cold outside I am going to have to make this thank you so very much❤

  2. Looks good. Will try this recipe as I do not like tomato soup such as the famous brand or any others. The canned soups have an off putting taste.
