Orzo Salad
This refreshing salad is light yet satisfying, perfect for a quick lunch, side dish, or gathering. The combination of tender pasta, crisp vegetables, and a tangy dressing makes it both colorful and flavorful.
Ingredients:
1 cup dry orzo pasta
1 litre of water, ½ tbsp salt (to cook the orzo)
1 cup cooked or canned chickpeas
3 Persian cucumbers
half of a red onion
3 medium tomatoes
100 g feta cheese
½ cup olives
Fresh parsley and mint leaves
For the dressing (adjust to taste):
3-4 tbsp olive oil
½ tsp salt
1 tbsp lemon juice
1 tsp dried parsley flakes
1 tsp oregano
Instructions:
1. Cook the orzo according to package directions (about 10 minutes). Drain (and rinse with cold water to stop the cooking process, if desired), add a bit of olive oil to prevent sticking, and let it cool slightly.
2. Chop the cucumbers, tomatoes, and onion into small pieces. Slice the olives.
3. In a large bowl, combine the cooked orzo, chickpeas, chopped vegetables, olives, and crumbled feta.
4. In a small bowl, whisk together the olive oil, lemon juice, salt, parsley flakes, and oregano. Pour the dressing over the salad and toss gently to coat.
5. Sprinkle with finely chopped fresh parsley and mint leaves for extra freshness.
6. Optional: add a spoonful of mayonnaise for a creamier texture.
Serve chilled or at room temperature.
