Old oven blew up last week. Just got our new one in, and it's a split oven – the top is a small, 1 shelf oven. It goes up to 550 degrees and seemed to retain the heat super well! What better way to test it out than with pizza.
Also this is my first time doing a 96 hour ferment, normally do 48 and this is noticeably better to me!
