I’ve spent part of the last few months working on developing my vegan choux pastry recipe β€” and, what an adventure 🀭
But now that I’ve finally nailed it, I’m making the most of it by recreating all my favorite pastries: profiteroles, Paris-Brest, Γ©clairs… all in vegan versions, and it’s pure joy!

It’s possible that I’ll keep improving it in the coming years, but for now I’ve got a stable version that I absolutely love!
At home, don’t worry if it takes you 2–3 tries to get the temperature and baking time just right β€” choux pastry is very delicate πŸ₯ΉπŸ₯Ή

    beautiful! you always inspire me. i’ve been developing a recipe for choux as well using just egg, but this is much more accessible (after what sounds like a long process lol, so thank you!)
