



Iβve spent part of the last few months working on developing my vegan choux pastry recipe β and, what an adventure π€
But now that Iβve finally nailed it, Iβm making the most of it by recreating all my favorite pastries: profiteroles, Paris-Brest, Γ©clairsβ¦ all in vegan versions, and itβs pure joy!

beautiful! you always inspire me. i’ve been developing a recipe for choux as well using just egg, but this is much more accessible (after what sounds like a long process lol, so thank you!)
