Looking for recommendations on how to use this. Originally was looking to make cheesesteak sandwiches from it but maybe this would be better prepared and used for a different meal. Advice appreciated.

I have a full kitchen, flat top propane griddle and a Weber kettle style charcoal grill so I have options for preparing a meal.

Traditionally a spencer was from a boneless ribeye, but I believe you have a top blade here. You could still make great cheese steaks if you fillet it along the sinew line and cut out 2 flat irons and chop them up for your flat top. I brought one of these home when I used to cut because a customer requested one & showed me their recipe for beef a la mode and it was great. Definitely recommend going that direction if you decide to roast it

  2. That’s some of the best beef you can get. I’m a CAB specialist for my company.

It’s a bread and butter roast. Or you can filet it for a couple of flat iron steaks.

    Blade two ways.
