Based on a meme I saw the other day. I decided to confit the garlic and immersion blend it with the tomatos, olive oil, and some pasta water. Also added some lemon juice to tame the richness. It's actually really good!

    How is this stupid ? I’ve made 40 clove chicken and it’s delicious . If they cooked the garlic in oil at a low slow temp like what it looks like in the pic then the garlic becomes soft and almost sweet , you can spread a clove of it like butter at that point .

    LPT: nuke your garlic cloves for about 10 seconds and they’ll just slide out of the husk! Makes for easy cleaning!

    My favorite Jarred Pasta Sauce, now discontinued as of earlier this year 🙁 , has like 20-40 Whole Cloves of Garlic in the sauce.

    Mezzetta brand, “Whole Garlic & Sweet Basil” was the sauce flavor

    It was part of a special more “premium” priced “colored label” sauces. Priced at 8.99 a jar i think, instead of the 6.99 like their normal non-premium “white label” sauces

    Now all the “Premium” sauces were discontinued this year. Still have the basic non-premium, but they taste pretty much like every other jarred sauce out there.

    The Premium Whole Garlic one i liked was soooo much better in every way, now i have to settle for Roasted Garlic just diced up and mixed into the sauce. And Roasted Garlic tastes nothing like Fresh Whole Cloves, so its not even a similar taste…

    This is not stupid, its garlic confit. When you confit garlic it becomes like a mild garlic paste and is nutty rather than sharp. It’s even better if you confit with charry tomatos in the middle of the summer when they’re sweet, with fresh rosemary and thyme. I prefer aleppo pepper to chilies flakes but confite garlic and tomatoes is one of the best ways to eat pasta during the summer.
