I make nice clean authentic sushi at home. When I go out I usually want exactly this sort of mayo saucy bullshit.

I go back and forth between phases of just wanting a simple salmon or tuna maki, or futomaki , something simple like a kappa roll… to wanting sushi rolls with ten thousand ingredients, deep fried, and covered in fish eggs and 80 sauces. Depends on my cravings.

Too many people are more worried about authentic than they are about enjoying their meal and I think it’s asinine.
I don’t like tempura stuff like you posted and so the hell what! It’s your food, not mine, you eat what you like and never let anyone tell you any different.
I may cringe a bit at things like well done steak – the only way my mother would eat any beef other than prime rib…bizarre but her father was a meat salesman 100 years ago when parasites were still a thing – but who the hell am I to tell anyone what they should like.

Can someone tell me what the sawdust looking stuff is on the roll 2 from the top? I got that on a roll I ordered last week at an AYCE place and while I didn’t hate it, I just felt like it didn’t add anything positive to the taste or texture and overall I’d like to avoid it if at all possible.

Who cares if it’s not authentic? If it’s good then crush that shit

Authenticity is a myth

Average South American sushi today, you hardly if ever see kappa maki or nigiri, let alone sashimi.

At what point is this just a poke bowl in a thin line. How do you even taste anything but mayonnaise and sweet sauces at this point?

I will always choose nigiri with quality fish and a Japanese chef, but man do I enjoy a well-sorted Korean-owned dirty roll with tuna and jalapeno.
