I made my first loaf this morning (using this recipe: https://littlespoonfarm.com/sourdough-bread-recipe-beginners-guide/).

I fed my starter yesterday morning, mixed the dough last night, and baked this morning.

I think it turned out well, but I don't know how to judge it other than by taste.

I was worried it was over-proofed, but I'm not sure. Anyone have an insight/advice?

I like it, the lack of big open holes means you can slather butter or jam on there and not have it leak out.

It turned out really well. You could proof a tiny bit more, but it’s in a really good range.
