Crispy Calamari Fritti is one of my all-time favorite ways to eat squid! After catching fresh squid at Rapid Bay, South Australia, this was the first thing that came to mind.

Ingredients
1 Large squid (or 2-3 small sized squid)
1L preferred frying oil (I used grape seed oil)
500g Semolina Flour (swap out for rice flour for a GF option)
1 Bunch Watercress (or use whatever greens you like, rocket, parsley, dill, etc)
Parmigiano Reggiano
Pepper
Salt
1 Lemon
Chilli Flakes
Mayo or Aioli

yes we got one we got to cook the squid that we caught yesterday at rapid Bay when you’re working with Squid you want to have a really sharp knife for this recipe I’m using the wof Ami series chef’s knife which is appropriate as we’re making an Italian recipe it has an olive wood handle which looks and feels amazing it’s naturally antibacterial and their knives come with a lifetime guarantee I’ve been using my woof knives forever they’re crazy sharp super easy to resharpen and that mean kind enough to give you guys a discount code which I’ll throw in the comments below give it a really good dry that paper towel semolina into the Bowl here and enough to coat it all that squid in there give it a really good toss around and get it as coated as possible greens wise you could use whatever you want I’m going to use some Water Crest nice little handful just for the one squid oil is at 180 I’m going to drop that in beautiful so that’s only taken a couple of minutes and that’s cooked it’s beautiful and crispy yeah and hot so I’m just going to pour that out into some paper towel bit of salt and give it that a toss around you want to move quite quickly here cuz this is hot we’ve obviously got the cooler Water Crest peel in some ribbons of Parmesan squeeze over some lemon and I’m working quite quickly you just want to give it little toss around and then we’re just going to it straight to that I wants to give you a message there you have it that’s our calamari we got calamari
