Ingredients:
– 3 tbsp olive oil
– ½ medium onion, thinly sliced
– 1 cup button mushrooms, sliced
– 8 oz beef steak (sirloin, tenderloin, or rib eye), cut into thin strips
– ½ cup beef stock
– 1 bay leaf
– 1 tbsp Dijon mustard
– ½ cup sour cream
– 2 tbsp fresh parsley, chopped
– Salt & black pepper, to taste
– Mashed potatoes, rice, or buttered noodles, for serving

Instructions:
1. Heat 1 tbsp oil in a heavy-bottomed skillet over medium-high heat. Add beef strips and sear until both sides are lightly browned. Remove from the pan and set aside.
2. In the same pan, heat 1 tbsp oil until hot. Add mushrooms, sprinkle lightly with salt and pepper, sauté until browned and tender. Remove and set aside with the beef.
3. Add the remaining 1 tbsp oil to the pan. Sauté onions over medium heat until softened and lightly caramelized.
4. Deglaze the pan with beef stock, scraping up browned bits for flavor.
5. Stir in Dijon mustard and bay leaf.
6. Return the beef and mushrooms to the pan. Season wit salt and pepper. Cook until heated through and bubbling.
7. Lower the heat and stir in sour cream. Mix gently until the sauce is smooth.
8. Remove bay leaf. Add chopped parsley, stir.
9. Serve hot over mashed potatoes, rice, or buttered egg noodles.
