The green thing you see attached to the chicken liver is the GALLBLADDER. It's attached to the liver and contains bile, a very bitter yellowish-green liquid that helps digest fats. When processing Pastoril chicken, it's sometimes not completely removed.

⚠️ If it ruptures and the bile touches the liver or the meat, it can leave a very bitter taste and even ruin the preparation.

Avoid rupture at all costs. If it is punctured, rinse the area well with cold water to remove all traces.

Is there a sub for offal? If so I’d suggest posting there. This is for ribeyes etc…

  2. Really important information to share! Bile is gross, liver is delicious, and those livers look spectacular. Enjoy them!!

I’m having a little trouble with sense of scale, are these especially big livers?

All these “meat lovers” that don’t eat offal are hilarious. Steak and kidney pie, heart and liver stew, give them a try and open your eyes to a word of flavour!!!

Considering how much I love innards, I think this is a great post!

Thank you for teaching me how to properly clean a chicken liver even though I will never use it. My cat seems to like it no matter what.

True story when I was younger I worked in a chicken slaughterhouse for all of about 2 days my job there was to pull this exact green thing out of the chickens as they passed by. However I couldn’t really hear anything they were saying because it was so loud in there and try as I might I could not find this green gallbladder so I ended up just patting all the chickens as they went by me. So some people might have got some gallbladder chicken

What in the fuck is a “pastoral” chicken? All I’m imagining is an ordained rooster blessing his flock.

I don’t crap about chicken anatomy but my guess is that is where the bile is stored and have eatened it by accident and it is bitter as heck!

I wash in milk to really neutralise as the taste can be terrible
