Did a whole brisket in July but this is the first flat. 2.5 pounds. Good enough for 4 people with ample sides though. $25 at Walmart.

Marinated overnight in thundering longhorn + extra black pepper.
Put it on the smoker around 9:30am at 225F
Wrapped in butcher paper around 169F about 3:30 or 4pm Also added butter. Increased temp to 250F.
pulled when it reached 201F . wrapped in foil and let it rest while we cooked sides.

The flavor was amazing and the family loved the meat. It was tender. However, if I do it again, I will put it on the smoker around 6 or 7 am instead. I feel like it would have been better to smoke an extra hour or two. I simply didn't have the time. I will pull it at 203 as well next time. The knife was too dull as well. Overall not bad for walmart meat.
