Was generally happy overall but the creme mousseline was a little too firm and the sponge was dense and not as tender as I'd hoped. All flavors were great though and everyone was happy!

    OP, that is a beautiful cake!

    Re the sponge—the batter may have been overmixed. (The texture gives that away.) Once you start working the flour and wet ingredients together, you want to mix only until the ingredients are incorporated. Don’t keep mixing.

    Some bakers do that last mixing by hand, not with a mixer, to prevent that occurrence. See if that helps next time you make this.

    I love strawberries, and I’m going to give this a try!
