Started in the oven at 275 for 25mins, then seared in a cast iron on high, with a final internal temp reading at 140-145. Served with mashed potatoes and sautéed mushrooms ❤️

    Beautiful. Eye of round gets a bad rap. Cook it to the right temp and slice it thin and it’s a winner. It has good beef flavor. I think it has better beef flavor than filet

    I’ve always liked cooking eye of round roasts in the colder months. Solid price to meat ratio, especially if you use an instant read thermometer
