Packed with protein from feta and cream cheese and topped with juicy roasted
tomatoes, it’s perfect for toasts, crackers, or fresh veggies.
Quick, easy, and utterly delicious, this dip is a crowd-pleaser every time. Let’s
dive in and make something truly irresistible! Step 1: Roast Tomatoes
Start by preheating your oven to 450°F, which is about 231°C.
In a baking dish, combine 2 cups of cherry tomatoes with 4 cloves of minced garlic, 1
tablespoon of dried oregano, 1 teaspoon of red pepper flakes, 1 teaspoon of ground black
pepper, and 1/3 cup of extra virgin olive oil. Tip: For a milder dip, skip the
red pepper flakes. You can also swap cherry tomatoes with grape tomatoes or plum
tomatoes for a slightly different flavor. Toss everything to coat the tomatoes evenly.
Add 5–6 fresh basil leaves or 2 sprigs and drizzle 2 tablespoons of balsamic vinegar.
Toss gently and roast for 15–20 minutes until the tomatoes burst and the oil
is sizzling. The aroma is irresistible! Step 2: Make Whipped Feta Dip
While the tomatoes roast, let’s make the whipped feta.
In a food processor, combine 375 grams of feta cheese, 1 cup of cream cheese at room temperature,
1/3 cup of extra virgin olive oil, 3 cloves of minced garlic, juice of 1 lemon, 1 tablespoon
of lemon zest, and 3 tablespoons of honey. Blend until smooth and creamy.
*Tip:* For a tangier flavor, swap cream cheese for Greek yogurt.
If you like a spicy twist, add a pinch of chili flakes.
For a softer, spreadable dip, add 2–4 tablespoons of milk or water and blend again.
*Variation:* You can add roasted red peppers or sun-dried tomatoes into the
dip for an extra burst of flavor. Step 3: Assemble & Serve
Once roasted, remove the tomatoes from the oven and set
them aside to cool for 5 minutes. Now for the fun part!
Spoon the whipped feta into a serving bowl and top it with warm roasted
tomatoes along with their juices. Sprinkle 2 tablespoons of toasted chopped almonds for
crunch and garnish with fresh basil leaves. Serve with toasted bread slices, crackers, or fresh-cut
veggies like cucumbers, bell peppers, or carrots. You can also pair it with pita chips or sourdough
toast for a Mediterranean-inspired twist. This dip can be made ahead. Keep the
feta mixture in the fridge and roast the tomatoes just before serving
