Cauliflower Mac & Cheese Recipe Ingredients • 1 large head cauliflower, broken into florets • 1 cup shredded cheddar cheese • ¼ cup shredded mozzarella cheese • ½ cup milk • 1–2 tbsp reduced fat cream cheese, softened • ½ tsp garlic powder • ½ tsp onion powder • ¼ tsp smoked paprika (optional) • ¼ tsp mustard powder • Salt + pepper, to taste • ¼ cup breadcrumbs or crushed pork rinds (optional) • ¼ cup parmesan (optional) Instructions 1. Preheat oven to 375°F. 2. Boil cauliflower florets 5–7 min until just tender. Drain well. 3. In a saucepan, warm milk + cream cheese. Stir in cheddar, mozzarella, garlic powder, onion powder, paprika, mustard powder. Season. 4. Pour sauce over cauliflower in greased dish. Top with breadcrumbs/pork rinds + parmesan. 5. Thanksgiving is going to be here before we know it. So, I’m starting early with some of my recipes today. Let me show you how to make this amazing low carb cauliflower mac and cheese. While the water is boiling, I’m going to remove the stems and leaves from my cauliflower and break it up into fuettes. I don’t like to use a knife for this step because I find that the cauliflower breaks apart too much. So, I like to just break the fuettes off by hand. And you can also just buy a bag of cauliflower fuettes which make it a lot easier. Ideally, you want them to be about this size. Now, I’m going to add the cauliflower fuettes to my pot of salted boiling water. And I’m just going to boil them for about 5 to 6 minutes so that they just quickly soften up since we’re going to be also baking this in the oven. While the broccoli fuettes are blanching, I’m going to make the cheese sauce. I’ve got one cup of milk. I’m using the Fair Life whole milk and I added about a tablespoon of reduced fat cream cheese. I’m just going to stir until the cream cheese melts into the milk. And now that the cream cheese is incorporated, I’m going to add my spices. It’s about a/ a teaspoon of onion powder, half a teaspoon of garlic powder, and 1/4 teaspoon each of smoked paprika and mustard powder. You can also use dijon mustard if you don’t have mustard powder. Give that a good mix. And now I’m going to add my cheese. I’ve got one cup of cheddar and 1/4 cup of mozzarella. You’ll still see some chunks from the cream cheese. That’s okay. It’ll all come together in the oven. I got this two-piece casserole set from STO that I love. I love this baby blue color. Spray with a little bit of oil. I’m using avocado oil. I’m going to add my cauliflower fuettes. And pour over the cheese sauce. And I like to top it off with some crushed pork rind because they’re low carb and they’re an amazing breadcrumb substitute. You can also use breadrumbs. I get the ground pork rind from Pork and Good. And for some extra cheesy goodness, I’m going to add a little bit of Parmesan cheese and top it off with a little bit of smoked paprika. My oven’s been preheating to 375. I’m going to pop this in there for about 15 minutes, just until it gets bubbly and warmed all the way through. And 15 minutes and the cauliflower mac and cheese is ready. How gorgeous does that look? Tonight I made smash burgers for my family. I’m of course using a low carb bun and I’ve got my cauliflower mac and cheese on the side. So cheesy, so tender, so full of flavor and the pork rind crisped up just perfectly. For some more texture and crunch.

Your cheese sauce wasn’t thick enough. You didn’t thicken it with a roux… as you can see, it’s running all over the plate. Because the cauliflower is high in water content, you really needed to thicken that cheese… I can tell at the beginning before you even added it to the cauliflower. It was gonna be running all over your plate.. Sorry, but that’s a hard pass for me..
