I ground 50g oats to flour and added to a bowl with 2 scoops (60g) vanilla protein and 10g coconut milk powder

Mixed 1 tbsp (15g) flax with 3 tbsp water, and 40g peanut butter powder with enough water to form a really thick peanut butter

After the flax gelled I added to a blender with the PB, m 1/3 cup water, 1 tbsp maple syrup, 1 tsp xanthan gum and blended for a minute

Kneaded it with the dry ingredients and then added 1tbsp freeze dried raspberry powder (this is optional but I really liked the tart flavour and had some on hand from cake baking)

Pressed the mix into a loaf pan to 1cm thick and baked at 150 C for 12 mins. I let it cool before slicing it into the 6 bars.

  1. Looks good! I’m going to have to give it a try. Might try swapping in some lupin flour over the oat flour to squeeze in some extra protein.
