    LOVE bright, pickled flavors with salty roasted/smashed potatoes. Growing up, my mom would bake potato wedges with a ton of garlic, lemon juice and some mint and they were crave worthy! The overbaked, soft potato would mush together with the dressing and it was just the best. This meal looks amazing!
