So, I just received my personalized cutting board and plantin presser from Cabraco Design. When I tell you the quality is top tier. So, today I’m making sawfish with green plantin. So, first I wash the sawfish and set it to boil. While that’s going on, I rub my hands with a little coconut oil. This makes the peeling the plantin so much easier. Then I’ll peel and slice them up. And yes, I’m using the plain side of the cutting board because I want to keep the personalized side nice and pretty. Next, I’ll fry the plantins for a few minutes. Then, I’ll press them, add a little salt, and then we’re going to fry them again. So, this is why we call it twice fried plantins. So, while those are sizzling, I’ll saute up the tomatoes, the onion, and of course, a little scotch bonnet salt for the extra kick. And I am using coconut oil to sauté up everything as well. So, once the sawfish is ready, I’ll top it up with some green onions. And just like that, sawfish and twice fried green plantin. M the perfect pier. Enjoy.
