Expanded the garden (and fruit options) for better year-round food security. We really enjoyed butternut last season so gave this veggie more space this year for a super harvest. Fills a fresh veggie need as the winter garden is developing. Should get us well into Jan and fill a nutritional need with it's superior levels of Vit-A/antioxidants and other nutrients like K, Mg, Vit-E. Will pair well with fresh broccoli, B-sprouts, Kale, beets. Kohlrabi and Collards. And so easy to store.

We're still getting long beans, eggplant and Okra. Figs are from two months ago. If you don't have a fig tree and love fruit, figs are super easy. These were split and froze for protein smoothies. Also made jam to add in plain yogurt and on sourdough toast. Wife comments on how fulfilling it is to skip the produce section this year for the most part. Difficult to go completely self sufficient, but certainly buffering ourselves from food inflation, especially as vegetarians.

    Wauw, very nice haul of butternut. I myself have 3 big ones. What do you do with it? i know its very good in soup.

    Awesome!!!! how are you storing them so that they stay good? i have a ton of frozen crookneck squash vacuum sealed in my freezer and tomatos. Not a vegetarian but w prices so expensively its nice to have fresh frozen vegs that i grew myself.
