Chef notes
I am well aware that it’s not always the coolest to like the most popular thing. As a society, we value conformity to some degree, but we put the individual on a pedestal. Sure, pop music is great, but isn’t it wonderful discovering some unknown indie band? The hole-in-the-wall restaurant that serves the best pupusas that no one knows about? Unabashedly loving Ellen Raskin’s 1978 mystery book, “The Westing Game,” when everyone else is going crazy for Harry Potter? (If you haven’t read it, you absolutely must.)
So yes, I understand that having slightly controversial opinions is sexy. But sometimes the popular thing is that popular for a reason — it is just absolutely the best thing.
The margarita has been the number one cocktail in the United States for decades. And do you know why? I mean, it probably has to do with marketing and the ubiquity of the drink, but I’m going with it’s just so damn good. It’s the Disney of cocktails — you know it’s overdone, that everyone loves it … but it’s because it’s perfect. It’s just perfect. So, knowing that, I decided to present you with the most perfect version (to me) of this most perfect cocktail.
