Heads up, sweet potato noodles such as the ones used in japchae are low glycemic so it’s fantastic for your blood sugar! Can eat that in many different ways if you’re ever craving instant noodles but need to avoid the carbs.
Also watch out for portion control on the pickled stuff in the banchan. They add alot of sugar to the pickled radish to counter the acidity. Same goes for the meat marinade for kalbi and gochujang-based marinades for pork.

Seaweed soup and spicy beef and radish soup are some of my favorites for low carb, diabetic friendly Korean food.

I’m finding extra firm tofu is a great sub for rice too. Eggs as well. Have to stay away from Hmart though, so much tempting junk food there.

That’s an absurd amount/types of ban Chan they serve you, u don’t wanna eat too much carbs through, veggie are also carb after all

How do you eat the tofu soup without rice? isnt the flavors too intense, too spicy, too salty without rice ?

You mean sundubu jjigae(순두부찌개), right? I like it too but it’s hard to find a good restaurant these days.

Ask your doctor about resistant starch. My husband is pre-diabetic and I cool the rice in the fridge before reheating it.
