Here’s how I prep for a week of healthy meals in under 90 minutes to save time and actually feel good all week long. I start by preparing the sweet potatoes for two dinners this week since they’ll take wild roast. Timing really is key when it comes to meal prep. I’ll finish out preparing the veggies that have to go in the oven and bake for a long time. In most weeks, I seem to prep as a gluten-free girly. All right, let’s finish washing up and slicing the veggies that’ll go on the stove for three other recipes this week. So much color. Okay, those potatoes are crispy. Now, let’s not forget the protein. Let’s make sure we’re generous with our spices, especially in this Moroccan chicken that we’re going to prep. I also made a simple garlic chicken for two other dishes. Now, throw in all those veggies, and let’s let the oven do the rest of the work. For breakfast this week, we’re making gluten-free dark chocolate chip pumpkin spice muffins. They’re lightly sweetened, and I added collagen for extra protein. Comment below if you want the full recipe. Now, who doesn’t love a good sauce? I made mine with freshly roasted bell peppers and toasted almonds. A good sauce can really elevate a dish, and this Romemesco is doing some work. I truly believe that eating healthy doesn’t have to be complicated.
