    Ingredients (2.0 lb loaf).
    • 1 ¼ cups water, 75–80°F.
    • 1 ½ tsp salt.
    • 3 ½ cups all-purpose flour.
    • 1 cup active sourdough starter (fed and bubbly, 100% hydration).

    Steps on My B2005 Breadmaker

    1. Load Ingredients.
    1. Remove the bread pan and insert the kneading paddle.
    2. Add water first, then starter, then flour, and finally sprinkle the salt on top.

    2. Kneading in the Machine.
    1. Insert the pan back into the machine and close the lid.
    2. Press MENU until the display shows DOUGH (about 2:00 hrs).
    3. Press START/RESET.
    • The machine will knead and give a short rise.
    • At the end, you’ll hear the Complete Signal.

    3. Bulk Fermentation (outside the machine).
    1. When the DOUGH cycle ends, remove the pan.
    2. Transfer dough to a lightly oiled bowl, cover with a towel.
    3. Let rise at room temp until doubled, 4–6 hours (can be longer if your starter is slow).

    4. Shaping & Proofing.
    1. Gently turn dough out onto a floured surface.
    2. Shape into a loaf and place back into the bread pan (coat the paddle with a little oil if you want easier release).
    3. Cover loosely and let rise until the dough is near the top of the pan, 2–3 hours.

    5. Baking in the Machine.
    1. Insert pan back into the breadmaker.
    2. Press MENU until the display shows BAKE.
    3. Use the UP/DOWN arrows to set bake time to 60–70 minutes.
    4. Press START/RESET.
    • The machine will only bake—no kneading now.
    5. When it beeps done, remove the pan with potholders, carefully turn the loaf out, and let cool on a rack at least 1 hour before slicing.

    As a professional, I’ve never used a bread maker. I find these little machines so fascinating, I’m down for ANYTHING to get people making their own bread 🤗
