Creamy spinach recipe. Quick and delicious side dish. Ingredients: 2 tablespoons butter. One tablespoon olive oil. Three cloves garlic minced. One small onion finely chopped. 500g one lb fresh spinach washed. Stems removed. Or 300g frozen spinach thawed and drained. 1 cup heavy cream or half and half. Half a cup grated Parmesan cheese. 1/4 teaspoon nutmeg, optional. Salt and pepper to taste. Instructions. One, sauté aromatics. In a large skillet, heat butter and olive oil over medium heat. Add onion and cook 2 to 3 minutes until soft. Add garlic and sauté for 30 seconds until fragrant. Two, cook spinach. Add spinach in batches, stirring until wilted, if fresh or heated through if frozen. Three, make creamy sauce. Pour in heavy cream. Simmer gently for 3 to four minutes. Stir in Parmesan cheese and nutmeg. Four, season. Taste and add salt and pepper as needed. Cook another 2 to 3 minutes until thick and creamy. Five, serve. Transfer to a serving dish. Perfect as a side for chicken, fish, or steak. Cooking time. Prep 5 minutes. Cooking 10 minutes, total 15 minutes. Serving serves four people.
