We made two types of calzones:

Greek-veggie with homemade arrabiata sauce. Inside was Greek olives, roasted red peppers, red onions, fontina, feta, and mozzarella cheeses.

Italian meat with homemade creamy garlic sauce. Inside was prosciutto, salami, and calabrese with red onions and a mixture of fontina and mozzarella cheeses.

We unfortunately do not have an Italian deli in my town, so I had to resort to the store bought pre-packaged stuff (god I miss New York). I realize that I could have stuffed the meat one with more and yes…I need to buy a better bread knife because the cross section cuts are pretty rough too.

But overall, flavor was very on point. We just need to refine our technique.

    That looks lovely!! I think the only thing I’d maybe add is a butter or egg wash with seasonings but that’s really up to you!

    Looks delicious! If you were interested in going for a more airy crust next time, skip the rolling pin and stretch it entirely by hand.

    Spread butter and sprinkle some extra cheese on the outside to keep it a bit more moist.

    i’m of the opinion that to minimize mushy texture in the filling and inner wall of the dough and prevent that half-steamed onion flavor, the veg should be cooked before it goes in and there should be no sauce inside

    Never seen a calzone with the sauce inside. Did you use any tomato product besides paste?

    They look great and tasty. I make calzones at home sometimes. I cheat and use Publix pizza dough.

    My only critique is I think with the sauce inside it becomes a Stromboli not a calzone?
