    🫒 Lunch: [Greek turkey and rice skillet](https://www.budgetbytes.com/greek-turkey-rice-skillet/) by BudgetBytes (8-10 servings)

    -Doubled the recipe and divided into 4 larger portions for my husband, and 5 for me. Topped with feta and lemon wedges – goes great with some hot sauce too, particularly Tabasco for slightly more acidity. Very tasty and enjoyable. Eaten alongside Light&Fit Greek yogurt

    🥘 Dinner: [Pasta e Fagioli](https://www.cookingclassy.com/olive-garden-pasta-e-fagioli-soup-copycat-recipe/) by CookingClassy (10-12 servings)

    -Doubled the recipe with extra servings to share with our toddler. I used whatever small pasta I had on hand – a mix of ditalini and elbow, cooked separately and added each night when reheating. Topped with Parmesan and served with some bread and a side salad (we love this [lemon and garlic vinaigrette](https://www.loveandlemons.com/lemon-vinaigrette/) by Love and Lemons). A full meal!

    🍫 Snack/pre-workout: [No-bake protein bars](https://tastesbetterfromscratch.com/protein-bars/) by Tastes Better from Scratch (12-16 bars depending how you want to slice them)

    -Okay now THIS is something that I highly recommend making!! I avoided making homemade protein bars for a long time, thinking it would just taste like protein powder. Boy I was wrong, and it’s super easy to have all the ingredients consistently on hand. And they last for 2 weeks in the fridge, and you don’t even need to bake them! I added dried cranberries and mini chocolate chips as an add in, and used Optimum Nutrition chocolate hazelnut protein powder. These are damn good, and IMO, best right out of the fridge after chilled for at least 24 hours. Do yourself a favor and try these.

    🥂 Extras: Spindrift Berry Belli-no sparkling water to enjoy after lunch, and Ratio yogurt for a nighttime snack
