My mom used to make a stuffed meatloaf as well, but she used carrots, white rice, and mozzarella. Growing up I wasn’t a fan, but over the years I came to appreciate it. Especially when I had leftover rice and chopmeat and no dinner ideas. I like your addition of the mixed veggies. Might give that a try. Hope you enjoyed it!
