I probably should’ve grabbed a bigger plate 🤣… this salad just kept growing! Started with a bed of “artisan romaine” (still not sure what makes it artisan, but I’m not complaining). Then came cucumber, tomatoes, bell pepper, and a lonely green onion I had hanging around. Tossed in some chickpeas for protein and the rest of a jar of olives, because they had to go… A simple drizzle of olive oil and red wine vinegar, plus a sprinkle of salt, pepper and oregano, was all it needed. Let’s just say I was very full after that one!
