I like sardines, and tinned fish, but I have to buy the filets because the bigger bones give me major ick. Grew up in FL eating seafood, got a bone caught in the throat once, now I have a permanent visceral reaction to it.

What i do, mash the sardines up in a bowl with ketchup and hot sauce, mix in some shredded cheese, spread it on toast and put under the broiler.
