Five minute healthy chickpea salad with no mayo. I do half a red onion. Two sprigs of green onion. Really great lunch if you’re looking for something that is going to keep you full for a couple of hours. You could add celery or even raisins to this. And some fresh dill. Three tablespoons of tahini. 2 tbsp of unsweetened plant-based milk. A tablespoon of mustard. Teaspoon of apple cider vinegar. and a teaspoon of maple syrup. This should be your consistency. A drain and rinse can of chickpeas. Those chopped veggies. Look at that. Wow.

I chop pickles and add some hummus/mash some of the chickpeas to keep it together so they don’t all roll out-lol

This absolutely looks delicious, my only thing is the texture. I’ll make a mashed chickpea salad. But I won’t bite into them this way. A few bites in and I’m weirded out lol.
