Five minute healthy chickpea salad with no mayo. I do half a red onion. Two sprigs of green onion. Really great lunch if you’re looking for something that is going to keep you full for a couple of hours. You could add celery or even raisins to this. And some fresh dill. Three tablespoons of tahini. 2 tbsp of unsweetened plant-based milk. A tablespoon of mustard. Teaspoon of apple cider vinegar. and a teaspoon of maple syrup. This should be your consistency. A drain and rinse can of chickpeas. Those chopped veggies. Look at that. Wow.

  1. I chop pickles and add some hummus/mash some of the chickpeas to keep it together so they don’t all roll out-lol

  2. WAIT WAIT WAIT!!! DO NOT TOSS OUT THE CHICKPEA WATER! it whips up like whip cream! Why not add to dressing???

  3. This absolutely looks delicious, my only thing is the texture. I’ll make a mashed chickpea salad. But I won’t bite into them this way. A few bites in and I’m weirded out lol.

    Now if you mash it a bit! I’d add that to some semolina pasta noodles 🎉
