
Just thought I’d post a quick update. After draining all of the original & replacement juices, I split the pork up into two batches, froze half of it and crisped up the rest in a skillet. I’m thrilled to report that that meat became the star of the most delicious burrito bowls, sharing the spotlight with an awesome cilantro jalapeño lime rice I whipped up from a new recipe (along with salsa, pico de gallo, avocado & Mexican crema). I also made some delicious tortas. I’m so relieved not only that I was able to save that pork, but that it is delicious in meals I look forward to eating. 😋

So was it literally just removing all the juice? Did the flavor just develop more when you cooked it on the skillet? Or was the salsa and avocado just smoothing it out?
