Did You Know? Even though it looks like rice, orzo is actually a type of pasta. The word “orzo” means “barley” in Italian, because of its rice-like shape.

Ingredients:

  • 1 cup orzo pasta
  • 2 tbsp Dijon mustard
  • 1 tbsp capers
  • Juice of 1 lime or lemon
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • 2 small cucumbers, sliced
  • 3 green onions, sliced
  • 1 cup cherry tomatoes
  • 1 cup fresh parsley, minced
  • Leafy green salad

Directions:

  1. Cook the Orzo: Bring a pot of salted water to a boil, add the orzo, and cook until tender. Drain and set aside.
  2. Make the Dressing: In a large mixing bowl, whisk together Dijon mustard, capers, lemon or lime juice, olive oil, salt, and pepper until well combined.
  3. Combine: Add the cooked orzo to the bowl and toss until coated in the dressing.
  4. Add Veggies & Herbs: Mix in sliced cucumbers, green onions, cherry tomatoes, and parsley. Toss gently until everything is evenly combined.
  5. Plate & Serve: Arrange leafy greens on a serving dish, spoon the orzo salad mixture on top, and enjoy fresh!
