    Estimate how much chilis you have by weight, you need approximately 18,000 g to fill a five gallon bucket. Get a food safe bucket and lid, a bubbler and grommet, and a food processor. Roughly chop the chilis in 1000 g batches incorporating 2-4% salt by weight. For me, this works better than filling your freezer full of peppers.
    Then you have a mash and your chilis are preserved.
