When I think of bodegas, the first things that pop into my head are honey buns, chopped cheese … and Cosmic Brownies. I assumed that Cosmic Brownies were universal, that everyone knew the fudgy Little Debbie–brand treats. But apparently not everyone has a photographic memory for bodega snacks.
Cosmic Brownies come individually wrapped in clear plastic and are studded with neon-colored candy-coated chocolate chips (which basically make them irresistible to 10-year-olds). My take is in the form of a whoopie pie — it’s softer, more decadent and, I think, even tastier.
Technique tip: To avoid overcooking, bake for 8 minutes and use a cake tester to test doneness.
Swap option: If you can’t find Dominican imitation vanilla extract, a great substitute is Mexican imitation vanilla extract.
