Persian Kotlet (Iranian Meat & Potato Patties)
Total Cooking Time: 90 minutes (traditional) | 45 minutes (modern)
Servings: 4 portions
Ingredients
Ground meat (lamb + beef mix) 500g (1.1 lbs)
Potatoes 500g (about 4 medium)
Onion 1 medium (150g / 5 oz)
Eggs – 1–2
Breadcrumbs or chickpea flour – 2-3 tbsp
Turmeric – 1 tsp
Salt & black pepper to taste
Oil for frying about 200ml

Instructions (Traditional Version)
1. Prepare mixture (20 min):
Grate potatoes and onion.
Squeeze out water completely.
Mix with ground meat, turmeric, salt, pepper and breadcrumbs.
Add eggs and knead until sticky and uniform.
2. Shape (10 min):
Take walnut-sized portions.
Flatten into oval patties with smooth surface.
3. Fry (30–40 min):
Heat oil in a pan (medium heat).
Fry patties 5–7 minutes each side until golden brown and crispy.
Serving Suggestions
Traditionally with flatbread (sangak or lavash), tomatoes, and pickles.
Modern: Greek salad or tahini sauce.
Tips & Secrets:
Always squeeze potatoes and onion well to avoid patties falling apart.
Add a little saffron or cinnamon to the mix for depth of flavor.
For a lighter version, bake or use an air fryer (180°C, 15–20 min).
