Let’s make Greekstyle jasmine rice. This is a great side dish. In a medium sized pot, we’re going to start with 3 tablespoons of butter and just a little bit of olive oil. Now, we’re going to add in our shallots. Season with a little bit of salt and black pepper. Once the shallots turn nice and translucent, we’re going to add our mixed garlic, dried dill, oregano, thyme, and lemon zest. Once that garlic is nice and fragrant, we’re going to add some fresh lemon juice, and then two cups of jasmine rice. Give that a stir so the rice gets nice and fragrant with the seasonings. Then, we’re going to add some fresh parsley and three cups of chicken stock. Now you’re going to bring this to a gentle simmer.
