I make this countless different ways, but here’s how this one came together! Add whatever you’d like, or omit what you don’t! If I have it on hand, I love to also add fresh mozzarella – the pearls are the best for this!
– Cube up your bread – it should be completely stale or dry all the way through! Mine was sitting on the counter for about three days! If you don’t have stale bread, you can cube up your bread, toss in a little olive oil, and toast in the oven on a cooking sheet at 400F for about 8-10 minutes or until dried!
– At the bottom of a bowl add a little bit of olive oil, balsamic vinegar, and red wine vinegar – you don’t need a lot!
– Add your veggies to the bowl. If you’re using freshly minced garlic, throw it in with the veggies. Toss everything together.
– Add your seasonings and herbs – fresh basil is the best for this! For this version I went with garlic powder, salt, & pepper. Give everything a toss.
– Add the cubed bread and a very light drizzle of balsamic if needed. Toss until everything is fully combined. Taste and adjust as needed.

Today I’m going to just throw like whatever veggies I have on hand. The only non-negotiable with panzanella is the bread. It has to be super stale or completely dried out in the oven. Other than that, have some fun. Use whatever you have on hand. Go in very lightly with the wet ingredients. Just a little olive oil, balsamic, and red wine vinegar. Freshly minced garlic is great, but today I went with garlic powder, salt, and pepper. Threw in some fresh basil with my tomatoes and cucumbers, and that was it.
