I saw a great sale on Chicken Thighs for $1 a pound at Giant Eagle. I bought 6 packages which was all I could fit in my freezer. I paid $3 for this entire pan which I’ll eat all week. I paired it with a salad. I cooked everything in one pan with olive oil, chicken broth and some shallots. Great comfort food!

I took the thighs and browned them in olive oil. Cooked the rice in the pan according to the directions. Added parsley and shallots along with chicken broth. Covered it and cooked on the stove for 40 minutes. Very easy.
