Every summer, my garden turns into a full-on tomato jungle, cherry tomatoes, Romas, big heirloom tomato beauties. you name it. Tomatoes are hands-down my favorite thing to grow (well, cucumbers are up there too!), and every year I end up with more than we can eat fresh.
That’s when this roasted tomato soup comes to the rescue. We take all those ripe, juicy tomatoes, roast them with sweet onions and garlic until they’re caramelized and bursting with flavor, then blend it all into the coziest, creamiest soup you’ll ever have. It also freezes beautifully!
Whether you pair it with grilled cheese, crusty bread, or just enjoy it by the spoonful, it’s pure comfort in a bowl, and the perfect way to make the most of tomato season. 🌿🥄

Hey friends, welcome back to my kitchen. My name is Courtney if you’re new and today we’re going to be making roasted tomato soup. It is super delicious, a great way to use all those garden tomatoes. Let’s get started. I’m going to start off by preheating my oven to 425° Fahrenheit. Then I’m going to wash all of my tomatoes and then prep them. I like to remove the stem and any fibrous parts like the inside as you see I’m removing here. Sometimes when you blend them up, they kind of stay in the soup and it’s like a fibrous bit. My kids don’t like them and neither do I. Sometimes you’ll get a juicy tomato that you just need to remove the top part and that is it. Again, you can leave that in, but I like to take it out. It’s just one little extra step and it’s not too bad. These are all tomatoes from my garden. So, there’s a bunch of different shapes and sizes. We’re even using the cherry tomatoes. I’m also using some blush onions. They’re not actually red onions, but they are blush. I grew these this year and I love them. So, I took two from my garden and I figured I’d use them in this recipe as well. We also have some fresh garlic that I’m going to be using. I did not grow my own garlic, but I am actually interested in trying it. I’m kind of nervous, but we’ll see. I got this from my local farm. And my favorite way to loosen the peel is just to push on it a little bit and then it comes right out. Now, I’m a big fan of cleaning up right away. So, once I’m done prepping everything, I like to wash my cutting board. I’ll take a clean towel and just wipe it down and then wipe it again and make sure it’s nice and clean. Then, I’ll take a bit of solid coconut oil and wipe down my board to make sure it’s nice and moistened. all of our produce prepped. We’re going to put it all onto a baking sheet and then I’ll add the rest of my tomatoes, which is a ton of little cherry tomatoes. I like to make sure that all my tomatoes are facing up. But first, I’m going to season them. We’re going to use a little bit of olive oil. And then we’re going to use a few seasonings. I like to use smoked paprika. I also like to use some salt, pepper, and granulated garlic. Then we’re going to get our hands a little dirty. Make sure they’re nice and clean. We’re going to mix this all up. Make sure all of our tomatoes are nice and coated. It is going to be blended up, but I still like to make sure everything gets roasted with the seasoning on it. I like to roast it for a total of 25 to 30 minutes. You can go a little bit longer if you want more depth of flavor, but this is perfect for us. And I also like to make sure they’re all cut side up so they nicely caramelize on the bottom. Then we’re going to take two cups of broth. You can use chicken broth or vegetable broth. I always have it in the freezer in my super cubes so I have it ready to go for things like this. Then we’re going to take those tomatoes once they’re ready and place them right into the pot. And then take some of that broth and put it over the baking sheet. Do not miss any of those flavorful bits. We’re going to add some fresh herbs. I’m using some basil and thyme, but you could use your preferred or you could even leave them out. I think it adds a bit of flavor, so I like to use them. Now, we’re going to cook this and let it simmer for 20 minutes. So, I’m going to bring it up to a low boil and then let it simmer for 20 minutes. We’re going to remove all of our herbs, or you could keep the basil in if you’d like and blend it up. I use a blender and I’m just using a stick hand blender, but you could also use a blender blender if you’d prefer, but just make sure the soup is not too hot when you blend it because it will be hot to touch. Then I like to taste it and season it as needed. I added a little granulated garlic, a little granulated onion, and then some pepper. The salt was perfect because I use my homemade broth, which is super flavorful. Then we’re going to taste it again, make sure it’s good, and then serve it as desired. My kids and my husband and myself love this recipe. We like to serve it with a little bit of Parmesan cheese and also a grilled cheese never hurts. I will say I absolutely love it with a little bit of cream inside. So you could blend a little heavy cream in there or you could top it with a little drizzle of heavy cream at the end. I tend to leave it out. This way if someone doesn’t like it, they could add it in if they prefer or leave it out. Here is our fresh homemade roasted tomato soup. I cannot wait to dig in. We’re going to go ahead and taste it. I let it cool down. I put a little drizzle of some heavy cream. You can leave it out if you’d like. Oh my gosh, I love that. I haven’t had tomato soup with cream in it in so long. It is delicious. It is super rich and creamy. It’s absolutely delicious. This would be great with some fresh bread. Mhm. Or even some crispy croutons, grilled cheese. My kiddos are going to try it and they can’t wait to have some. It’s cooled down, of course, for them, too. Mhm. You can even serve this with pasta. Like, literally put it over pasta. So good. All right. I love this soup. My little guy wants to give it a try, so he’s going to do it, too. Can I taste the cream? Yeah, it’s got cream in there. You can taste the cream. I don’t taste that. Oh, you want the big blob of cream? Yeah. You want more? Yeah. I want to eat this whole thing. You want to eat the whole thing? You like it? That’s a big Do you want a little spoon? I’m sorry. I just realized I’m giving you a big spoon. What’s wrong? I want a little spoon. It’s a big spoon for him. Is that spoon better?
