Ingredients:
2 eggplants, sliced
2-3 tomatoes, sliced
1 lb ground beef
1 small onion, chopped
2 garlic cloves, minced
1-2 cups tomato sauce
1 ½ cups shredded cheese
Olive oil, salt, pepper, herbs (optional)
Steps:
1. Prep Eggplant: Salt slices, let sit 10 min, pat dry. Roast or pan-fry until soft.
2. Cook Beef: Sauté onion & garlic, add beef, season, cook fully, add a little sauce.
3. Layer: In a pan, alternate eggplant, tomato, beef, cheese. Repeat.
4. Top & Bake: Add sauce & cheese on top. Bake at 375°F (190°C) for 25-30 min.
