




I've been doing a challenge to cook a famous smoked/BBQ dish (or bbqify a popular dish) from all states in the US. No rules or anything, but so far I've stayed in alphabetical order through from Alabama – Hawaii.
Today it was Hawaii's turn with Kalua style pulled pork. Still did it in an offset, because I don't live in an area where you can cook in the ground, but tried to keep it traditional otherwise.
It turned out pretty amazing! The only seasoning in it was Hawaiian red salt, no dry rub or sauce whatsoever. It's flavored with the banana leaf it gets wrapped in during the smoke (I did it when it hit 165 internal). Super juicy!
This one is going to be a repeat!

Love it! Where did you source the salt and the banana leaves?
Did the banana leaves impart enough flavor, if you had to do it over again would you do it from the start?
My man! That’s a staple at our house.
For me I have a Kamado and can’t get the mesquite flavor I want as easily. Highly recommend Salty Wahine Kiawe Smoke salt mixed with your Red Sea salt if in a similar situation as it’s just sea salt smoked with mesquite wood.
Cook up some cabbage and white rice as your sides and you are set.
