Guys, I got a bowl full of chicken and we’re making fajitas. Let’s get them marinated. We’re going to start with the oil. That’s going to act as our binder. I’m going to add a little bit of cider vinegar in there, too. The acidity is going to be just perfect. Big pinch of kosher salt. And I got some black pepper. Now, we’re going to go in with some cumin. I have some garlic powder. Little bit of dried oregano. And we finish with some paprika. This is going to be perfect. Just get in there and mix this whole thing up. We want to be sure it all gets really well coated. Once we get a good full coverage, we’re going to set that aside. We’ll let it soak for a little bit. Now, we’re going to make some beans to go with these fajitas. I got a little bit of oil, onion, and a hot pan. Quick sear. I have my salt, pepper, garlic blend. That’s going to be a nice seasoning on those onions. I’m going to add in some minced ham. The flavor is going to be just perfect. We throw in a can of beans. One can with the juice, one can without. That’s going to be just the right amount of liquid. I have some chili powder. I have some whole oregano. I’m also going to throw in a can of fire roasted tomatoes and a can of Hatch green chilies. Just stir that all up. Get that mixed up. Let it simmer for a little while. Let those flavors come together. Now we cook the fajitas. My grill is hot. We’re going to move this chicken around. We’re going to get full coverage on this grill. That way we get all nice and crusty on the bottom. We start stir frying this around. Get that chicken cooked really well, guys. I’m going to make a hole in the center. We’re going to add our peppers and onions. We season those up. Salt and pepper. I’m going to give them a little stir fry right in the center. Then we’re going to toss this whole thing together. It’s going to be just perfect. It smells amazing. The chicken marinade was perfect, I think. Guys, look at that. It’s ready. Let me show you how we build this plate. Now, I take a couple flour tortillas. I scoop up a plate of those fajitas. They’re nice and hot and ready. Clean up the edge. Little bit of jack cheese on top. Little dish of the beans. Some guacamole, guys. Crema to finish. And we throw on those tortillas. Dinner is served. What a treat. Look at that. Thanks for watching.   1. Only thing that dish needs now is cilantro lime rice. Looks amazing. I'd cook the peppers and onions until they're caramelized but that's just me.

  2. If you want perfect crispy beans. Then the beans get added as the last ingredient. Gives the perfect bite. Adds texture to the fajitas.

  3. Im just glad i can not smell what you cook as watching it is bad enough. Its just not fair that i see you make all of this good stuff usually about the time im eating what ever it is i have in my semi before i lay down for bed. Good stuff
