Ingredients:
Tahini Dressing
▢⅓ cup Tahini
▢1 Lemon, juiced
▢1 clove Garlic, grated
▢1/2 tsp Salt
▢1/8 tsp Black pepper
▢3 tbsp Water
Salad
▢3 Persian cucumbers, chopped
▢2 Roma tomatoes, chopped
▢1 small Red onion, chopped
▢½ cup Parsley, chopped
Instructions:
Place the tahini, lemon juice, garlic, salt, pepper and water in a large bowl and mix using a spoon or a small whisk.
Add the chopped cucumbers, tomatoes, red onion and parsley to the dressing and stir to combine.
Taste and add more salt and pepper if needed.
Serve immediately, or refrigerate for 15 minutes before serving.
