I know as a chef who is trained in French cuisine, I am biased towards French food, but I genuinely think this French carrot salad with Dijon vinegrett is the best carrot dish out there. And no cooking is even involved, which is a huge win. It combines grated carrots, minced shallots, and then golden raisins as the base. But the simple Dijon vinegrett is what makes it really shine. All you have to do is whisk together lemon juice, garlic, a lot of good Dijon mustard, honey, and good olive oil. And what’s great about it is that it holds really well. So you can like dress this and pop it in the fridge and have it for a few days. Healthy and delicious. It’s the best carrot dish.

  1. That looks horrible!!! I'm all for healthy eating and everything, eat what you want, type of person, but this vegetable and grass eating thing isn't a way to live.
    The life expectancy is the same.
