✨Hailey’s Creamy Mac & Cheese✨

Ingredients
• ½ lb elbow pasta (or your favorite shape)
• 3 tbsp unsalted butter
• 1½ cups medium cheddar cheese, freshly shredded
• ½ cup mozzarella cheese, freshly shredded
• 2 slices American cheese (optional, for extra creaminess)
• 1 cup evaporated milk
• ½ cup heavy whipping cream
• 1 tbsp cornstarch + 3 tbsp water (mixed into a slurry)
• 1 tsp garlic powder
• ¼ tsp paprika
• Salt & black pepper to taste
• Crushed red pepper (optional, for heat)
• Reserved pasta water (as needed)
• Crispy bacon (optional)
• Chopped parsley (optional, for garnish)


Instructions

1. Boil the Pasta
Cook pasta in salted boiling water until al dente. Reserve a splash of pasta water, then drain and set aside.
2. Make the Sauce Base
In a saucepan over medium heat, melt the butter. Add evaporated milk and heavy cream, then stir in the cornstarch slurry. Let it simmer for 1–2 minutes until slightly thickened.
3. Add Cheese & Spices
Lower the heat. Stir in garlic powder, paprika, cheddar, mozzarella, and American cheese (if using). Stir continuously until melted and smooth. Season with salt and black pepper to taste.
4. Combine with Pasta
Add the cooked pasta to the sauce and toss until fully coated. If the sauce is too thick, add a splash of reserved pasta water to loosen it up.
5. Garnish & Serve
Top with crispy bacon if using. Garnish with chopped parsley, crushed red pepper, and a final pinch of black pepper. Serve warm and enjoy every dreamy, cheesy bite! 💛
