If you’re trying to convince someone to eat eggplant, just just make this. Welcome to my series, Eggplant Diaries. Today, I’m making a classic Baba Ganoush. The secret to a really good Baba Ganoush is properly roasting your Oberins over an open flame. They should get nicely charred and soft so the skin peels off easily. That’s what gives the dip its deep smoky flavor. Once roasted, mash them with a fork. Then add a few cloves of garlic, fresh lemon juice, salt, olive oil, a generous spoon of good tahini, and just a hint of cumin. You can leave it chunky, but I like blending mine for extra creaminess. I finish it with fresh coriander, a sprinkle of sesame seeds, and a warm, freshly fried flatbread. If someone claims they don’t like Ober jeans, they’ll fall in love with this
