Why had I never roasted celery hearts before? While clearing out the fridge, I tossed some leftover celery in the oven with a few carrots, and it turned out to be a revelation. To pair with it, I whipped up a peanut butter sauce (because celery and peanut butter has always been one of my favorite snacks). The combination was fantastic.
I served it alongside seared tuna steaks, just lightly coated in sesame seeds, some black rice. The whole meal was a hit!
The peanut sauce was a simple mix of peanut butter, lime juice, soy sauce, grated ginger and garlic, and a little sriracha.

    This looks so good! I love roasted vegetables but have never thought of roasting celery. Until now my only use for celery that had lost its crispness was adding it to the scrap bag in my freezer that I use to make vegetable stock.
