This one is one of our favorites. We have it with any kind of protein to complement a meal or as a snack with a piece of bread or crackers.
 
Ingredients:
– 1 big eggplant
– 1 clove of garlic
– 4 tablespoons pepper sauce
– Chopped parsley
– 2 tablespoons olive oil
– ¼ teaspoon cumin
– ½ teaspoon paprika
– ½ teaspoon ground coriander
– Salt & pepper
 
Instructions:
* Partially peel the eggplant to leave some parts with the skin and cut it in any shape you want.
* Add the garlic, pepper sauce, oil and all the spices.
* Mix well, add about ¼ cup water to help release moisture. I forgot to add it in the beginning but added it mid-way.
* Cover and cook on very low heat for about 20 minutes or until the eggplant is very soft and mushy stirring frequently.
* Turn the heat off, uncover the pan and add the chopped parsley.
Serve warm or cold.
