I’m no meat connoisseur but I’m 99% sure it’s not cow. Also, lighter for scale because they are rather large, at least to me. Sorry for potentially stupid question

Its called a “blade steak”. Its a cross section of a bone-in pork butt.
More suitable for roasting and grilling than slow braising.

You don’t want a thick pork steak like that because they are a tough cut so you want to get it cut thin. I would probably cut that into country style ribs.
